Sometimes there are orchards and vineyards that are organic. Sometimes they’re a step further and are almost quite forgotten about. Then you have… feral orchards. Sites that are nearly re-taken by mama nature and can boast the words “regenerative by absence of intervention”. That’s the kind of orchard we find ourselves working with in our *FIRST*EVER*CIDER.
Comprised of Sebastopol cider apples (Winesap, York Imperial, Empire, Ben Davis, Winter Banana, Rome, Jonathan and Newtown Pippen) this cider is clearly a departure from our standard lineup. When fires threatened a majority of our vineyards in 2020, we decided to bob and weave in a big way. Thus, cider! The fruit was tank fermented and bottled juuuuust before the end of ferment. Thus the perfect effervescence! We did disgorge due to the heavy lees that came naturally with the apple fermentation process.
