2019 Galaxy Carbonic Carignan

Ooo it’s carbonic? Ooo it’s organic?! OOO IT’S FROM TESTA?!? We should play it cool, but we can’t help but have giggle fits of excitement over this one. Carignan is a fun variety from a winemaking perspective. Depending on growing conditions, it can be disjointed and awkward or stunningly bright and refreshing. When working with sites as dynamic and superlative as Testa, it’s easy to make a hit. This particular block was planted just after WW2 on Yokayo series silty loam. What we have here is a true carbonic situation. Individual enzymatic fermentation occurs inside every single berry, which is kept whole cluster inside flex eggs. After one week of being sealed up in the egg we then press to neutral French barrels. Once the wine is pressed it goes through traditional fermentation of the sugars via ambient yeast. Nom nom nom. The singles on this EP are crunchy early raspberries, orange peels, and twizzlers (suck it, red vines). The B side is herbal and just a little bit verdant. Structurally there’s an inviting, delicate nature combined with bright summer-red acidity. On that note, we recommend serving her chilled after two Modelos and a quick river dip.
